Checkerboard

This Barrington Tote is fabulous!  I've only had it a couple weeks, but I am loving it.  It's large without being bulky.  I can fit all I need for the day in it, my planner, my laptop, a water bottle and whatever else my husband or kids give me to carry.  Y'all know how that goes!

I chose the chocolate-khaki color combo in the checkerboard pattern.  I love how it is a classic look that easily goes with my day to day looks.  And of course I added my initials to the front leather square!!

Work it

Call me crazy...but I like to workout!  I can remember back to middle school when Betsy and I would get up early to do aerobics (haha!) in our living room before school.  I know, I know - crazy, right?  I've done about every type of exercise.  From aerobics, to weightlifting, "buns of steel" (anyone remember those videos??), to running.  I just feel better afterwards.  Of course I'm human and take a week or two off here and there, but I really just aim to do something active 4-5 times/week.

I enjoy meeting up with friends to workout or go running when possible.  Otherwise, I workout at home.  I found bodyrock.tv about 2 years ago and I'm addicted!  The workouts are spot on!  Some are a longer 45-60 mins while some are a hard and quick 20 mins (my favorite!).  The site can be overwhelming at first because they have so many workouts and tons of information.  If you look down the right side, you can find workout challenges.  Right now, I'm doing the Hiit Max workouts.  You can also find the videos on You Tube.  If you're looking for something new and different to do, I highly recommend you giving it a try.

Of course, fun athletic clothes always help!

Chicken Tortilla Soup











These cold winter days are best with a bowl of hot soup.  Great for an easy lunch or dinner.  My family loves this chicken tortilla soup.  It starts with Bear Creek Tortilla Soup Mix.  I get mine at Target, but most grocery stores carry it. This soup mix makes the soup fast to prepare and delicious with its perfect spice blend.  

 I use a rotisserie chicken from the grocery store for the chicken in this recipe.  I usually use rotisserie chickens in my soups and casseroles because they are soooo delicious and soooo convenient.  I shred them when I get home from the grocery, put in tupperware, and the chicken meat is ready for when I need it that week.  Such easy prep!

You could easily make this soup vegetarian by leaving out the chicken and using vegetable stock instead of chicken stock.  

The toppings make this souper special (see what I did there!).  You really could add anything you like.  I listed some of what we usually top it with. 
What makes it perfect for a family or group is that everyone can customize it with what they like.  This would be perfect for a Super Bowl Party this Sunday.

Chicken Tortilla Soup

Ingredients
  • 1 medium Onion, diced
  • 6 c Chicken Broth
  • 2 c Water
  • 1 Bag Bear Creek Tortilla Soup Mix
  • 1 can (16 oz) Diced Tomatoes, not drained
  • 1 can (16 oz) Corn, drained *
  • 1 can (16 oz) Black Beans, drained/rinsed
  • 1 Rotisserie Chicken, shredded
Cooking Directions
  1. On medium heat, saute diced onion in 2 T olive oil until tender, 2-3 minutes.
  2. Add chicken broth, water and Tortilla Soup Mix. Whisk.
  3. Add tomatoes, corn, beans, and shredded chicken.
  4. Bring to a boil and then reduce heat to simmer.
  5. Simmer at least 15 min. or up to 1 hour. Add additional water if needed.
  6. *Frozen corn can be substituted for canned corn.

Cheese
Avocado
Sour Cream
Cilantro
JalapeƱos
Green Onion
Tortilla Chips

Purple Piko











Another weekend has come and gone (waaaayy too fast!).  It has been cold, grey and gloomy here in Ohio.  I wore this outfit the other day in need of some bright color! I absolutely love this Piko shirt.  It's tight in the arms while loose and free flowing everywhere else.  It's one of those shirts that make an easy outfit to throw on quickly and race out the door.  I can see myself owning multiples of this shirt in a variety of colors or this stripe version.

Fur Vest 4 Ways


It took me weeks to decide to get this faux fur vest.  And then once I put it in the shopping cart online, it still sat there for a week or two.  I kept looking at it online, wondering how much would I wear it?  Would it be worth buying?  Is it too bulky?  But now that I have it, I love it!  If you don't have a faux fur vest, you need to get one, NOW!  And it's on sale.  There are so many outfits you can wear a faux fur vest with.  And do you see the stripes?  So cute!  Subtle, but they add a little extra interest.  Also, the length is a little longer than some fur vests I've tried before, very flattering. 

Katey got the vest too.  Actually, before I got mine.  We decided to show you 4 different ways you can style your faux fur vest.  It looks great with a dress and booties for cool Spring nights.  It can add easy pizazz to a simple black tee and jeans.  Adding it to an all white combo is a very classic look.  And as we all know... everything goes with a chambray shirt!

Neither of us are big coat people.  We tend to both gravitate towards wearing vests.  We like the freedom to move our arms and not feel too bulky, especially when driving.  However, these trench coats we are both wearing are a great staple to have.  They are light-weight, moveable, and fun. A colorful or patterned coat can quickly elevate even the most basic outfit!  And there are just some days that a light coat is needed.

The coats we have on above are from a couple years ago, which goes to show how a classic spring coat    is an easy closet staple.  We have listed some other great trench/spring coats below.

Stripes and Fringe

This blanket sweater from Anthropologie had me at stripes and fringe!!  I saw it in the store window as I was walking by and had to stop in and try it on.  It also comes in a tan/cream thinner stripe and both are currently on sale.  The sweater is super soft and not too thick.  Living in NC, I don't usually need heavy sweaters, so this one is perfect.  I paired with my white jeans, which have been on major repeat this winter.

Monongrammed Clutch






Living in the south now, I have come to love anything monogrammed.  This clutch has a beautiful scripted monogram and a gold bracelet handle.  It can go from day to night.  I got it from a darling boutique in Cary, NC called The Pink Alli.  Check it out if you live in the area!  If not, luckily monogrammed clutches can easily be found.  I have linked a couple other options below.
